Sweet and Savory Orzo Salad

This light orzo salad combines sweet and savory flavors; a welcome alternative to a traditional pasta salad.
Ingredients
- 2 cups orzo
- 1 cup sweet yellow pepper, chopped
- 1/2 cup black olives, sliced
- 2 cups bleu cheese crumbles
- 2 cups cherry tomatoes, halved
- 3 slices prosciutto, chopped into 1 inch pieces
- 3 scallions, chopped into 1 inch pieces
- Dressing:
- 1/2 cup olive oil
- 1/4 cup white wine vinegar
- 2 tbsp fresh squeezed lemon juice
- 2 tbsp sugar
- 2 tbsp honey
- 1 tsp sesame oil
- 1/2 tsp salt
- 1/2 tsp garlic powder

Method
Cook orzo according to package directions, drain and cool. Combine orzo with peppers, olives, bleu cheese, tomatoes, prosciutto and scallions. Cover and refrigerate while dressing is prepared. In medium mixing bowl, whisk together olive oil, vinegar, lemon juice, sugar, honey, sesame oil, salt, and garlic powder. Retrieve salad from refrigerator, add dressing to bowl and toss. Replace cover and refrigerate at least three hours before serving.
Notes: The sesame oil offers just a hint of fusion flair, as it's Asian twist blends well with the primarily Mediterranean ingredients.
