Talk Turkey Burrito Snacks

These tortilla roll-ups are filled with garbanzo beans, turkey, and spicy cheese. Serve as a snack or for lunch.
 

Ingredients

  • 4 10-inch flour tortillas
  • 1 16-ounce can chick peas (garbanzo beans), drained
  • 1 cup shredded Monterey Jack cheese with jalapeno peppers
  • 1/2 cup finely chopped red onion
  • 1 cup shredded Romaine lettuce
  • 3 cups finely sliced, cooked turkey
  • 1/4 cup salsa
  • Dairy sour Cream
  • Salsa

Method

Heat oven to 400 degrees F. On each tortilla, layer chick peas, cheese, onion, lettuce and turkey. Drizzle 1 tablespoon salsa over each. Fold in ends of tortillas and roll. Place seam side down on baking sheet. Bake 10 minutes. Cut each burrito into 2 or more pieces and serve with sour cream and additional salsa.

 

Notes: A way to use up leftover turkey. If no turkey, chicken or beef are good.
