Tasty Triangle Pot Pies

Combine turkey with gravy, peas, carrots, and herb and use to fill purchased pastry for easy lunch or dinner sandwiches.
 

Ingredients

  • 1 15-oz package rolled refrigerated pie crusts (2 crusts)
  • 2 cups diced cooked turkey
  • 1 cup turkey gravy
  • 1 teaspoon snipped fresh thyme leaves
  • 1/3 cup peas and carrots (frozen and thawed, or leftovers work great)
  • 2 tablespoons melted butter

Method

Preheat oven to 375 degrees. Cut each pie crust in half, forming 4 semicircles. In medium bowl, combine turkey, gravy, thyme, and peas and carrots. Spoon mixture evenly along one side of each pastry piece. With water, moisten edges of pastry. Fold pastry over filling, forming triangles. Crimp edges to seal. Prick top in several places to allow steam to escape. Brush each with butter. Bake 18 to 20 minutes or until golden. Let cool 5 minutes before serving.

 

Notes: This fun "pot pie" recipe is a perfect way to turn ho-hum leftovers into something much more interesting.
