Texas Coleslaw

You can use part red cabbage in this classic creamy coleslaw recipe if you like. The crisp-cooked bacon adds a nice crunch.
 

Ingredients

  • 1/2 pound bacon
  • 1 head cabbage, shredded
  • 2 cups mayonnaise
  • 1/2 cup apple cider vinegar
  • Pepper

Method

In a skillet fry bacon until done. In a bowl, combine mayonnaise and vinegar; mix well. (Should be the consistency of ranch dressing.) Drain off most of the fat from the bacon, leaving a thin coating on bottom of skillet. Add the mayonnaise mixture to the skillet. Warm the mixture over low heat, but do not boil. (It will separate if it boils.) Once heated, remove from heat and poor over the cabbage. Add pepper to taste. Crumble the bacon and stir into cabbage.

 

Notes: You can substitute half of the mayonnaise with light mayonnaise as well as substituting turkey bacon for regular bacon. When you add the mayonnaise mixture to the skillet after removing the turkey bacon, you will need to spray it with cooking spray to avoid it from sticking to the pan.
