Thai Halibut Stir Fry over White Rice


Halibut, a low-fat white fish with a great flavor, is combined with stir-fry vegetables and served over rice, for a satisfying dinner for everyone.



Ingredients:

  • 1 pound fresh halibut fillets
  • 2 cloves fresh garlic, minced
  • 1 onion, diced
  • 1 cup sliced mushrooms
  • 1 cup fresh cilantro, chopped fine
  • 1 cup thinly sliced carrots
  • 1 lime
  • 1/2 cup chicken broth
  • 1 can unsweetened Thai coconut milk
  • 1 tbsp olive oil
  • 2 tbsp oyster-flavored sauce
  • Fresh ground pepper, to taste
  • 2 cups cooked white rice
  • Fresh cilantro and lime wedges (for garnish)

Method

Cut halibut into 1-inch pieces and set aside. In large sauce pan over medium-high heat add olive oil and stir-fry mushrooms, garlic, onions and carrots for 2 to 3 minutes; add chicken broth, halibut, cilantro and oyster sauce; cook another 2 minutes. Add coconut milk and lime juice and simmer on medium heat for 10 to 15 minutes. Add black pepper to taste. Serve over white rice. Garnish with fresh cilantro and lime wedges.

Notes: This dish only takes 20 minutes to cook, so it is an easy dish to make after I get off work, and my family thinks I have spent hours on it.
