Tomato Aspic

This easy tomato aspic recipe contains both lemon-flavored and unflavored gelatins, along with vegetable juice cocktail and canned mixed vegetables. Serve it with the horseradish dressing below.
 

Ingredients

  • 2 small or 1 large pkg. lemon Jello
  • 1 envelop Knox gelatin
  • 1 46-oz can V-8 Juice
  • 1 can Mixed Vegetables, drained

Method

Empty both gelatins into saucepan. Add 1 cup of V-8 juice, stir well and let stand for 5 minutes. Heat, stirring constantly, until gelatin has dissolved. Add remaining V-8 juice and mix well. Add mixed vegetables; pour into 2 quart mold. Cover. Put in refrigerator until set. Remove from mold and serve with the following dressing. Mix together equal parts of sour cream and mayonnaise. Stir in horseradish to taste. Place in bowl. Sprinkle paprika on top.
