Tomato Bake

Refrigerated biscuits form the base of this dish. They're topped with sliced tomatoes, then with a mixture of mayonnaise, jack cheese, onion and basil, and baked.
 

Ingredients

  • 1 can refrigerated biscuits (not buttermilk)
  • 4 large tomatoes, peeled & sliced
  • Salt & pepper
  • 1 cup mayonnaise
  • 1 cup shredded Monterey Jack cheese
  • 3 Tbs chopped onion
  • 1 Tbsp. basil

Method

Spray a 9 x 13 inch baking pan with cooking spray. Press out biscuits to cover bottom of pan. Place sliced tomatoes on top of biscuits. Sprinkle with salt and pepper to taste. Mix mayo with cheese, onion and basil. Spoon mayo mixture on top. Bake at 425 degrees for 12-15 minutes.
