Traditional Tomato & Onion salad

The longer you let this salad sit and marinate, the better the flavor you will have. This is a perfect salad for spring and summer because of its freshness.
 

Ingredients

  • 2 to 3 medium ripe tomatoes sliced and cut in pieces
  • One large sweet onion sliced and then cut in pieces
  • Several large fresh basil leaves
  • Italian olive oil
  • Freshly crushed garlic
  • Salt and fresh ground pepper to taste
 
Method

Place the cut up tomatoes and onions in a bowl. Chop the basil into small piece and add to mixture. Crush the garlic and add it to the olive oil in a small cup. (I keep a cup made up in my refrigerator so that the garlic flavor infuses the oil). Add several tbs of the garlic oil mixture to the tomato, onion, basil mixture, sprinkle liberally with salt and fresh pepper and fold all ingredients together.

 

Notes: This may be served right away but is even better if you let it sit for a while to mix the flavors before serving.

 

Number of Servings: 3 to 4 servings
