These easy to make turkey wraps are stuffed with ricotta cheese, zucchini and asparagus and a cranberry sauce on top.
 

Ingredients

  • Four thick slices oven roasted turkey
  • 1 cup ricotta cheese
  • 1 Tbsp Italian seasoning
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/8 tsp fine ground black pepper
  • 1/8 tsp salt (optional)
  • 1 medium sized zucchini 8-9 inches in length 1 1/2 inches tick
  • 12 fresh small asparagus stalks
  • 1 12-15 oz cranberry sauce
  • Four toothpicks

Method

Mix ricotta cheese and all the spices in small bowl and divide into four servings. Cut zucchini in to four inch pieces then cut again to make twelve 4 inch sticks. Cut the asparagus into 4-5 inches pieces, discard stems. Lay four individual pieces of turkey meat flat and spread 1 serving of Ricotta cheese mixture evenly over 3/4 of the meat, leaving 1/2 inch from outer edge. Place three zucchini sticks and three asparagus sticks on top of each other, over the cheese mixture near bottom half of the slice of meat. Starting at the bottom, roll carefully and make sure turkey meat overlaps, secure with one toothpick per slice. Place the rolled turkey pieces onto cooking sheet and place in preheated 400 degree oven and cook for 15 minutes. While turkey wraps are cooking, put one can of cranberry sauce into small cooking pot and heat on top of stove until hot, stirring to break up lumps and keep from burning. Remove wraps from oven, place on dinner plate and pour heated cranberry sauce over top of wraps. Serve with other side dishes.

 

Notes: The prep time is about 15 minutes. The cook time is 15 minutes. You can substitute the fresh aspargas with a jar of pickled asparagus spears.
