Vegetable Beef Soup with Shin Bone Broth

This old fashioned soup recipe is loaded with vegetables and a savory home-made broth.
 

Ingredients

  • One shin bone (buy the largest one you can find, usually about 1 lb)
  • 2 quarts water
  • 1 cup diced celery
  • 1 cup diced carrot
  • 2 cups shredded green cabbage
  • 1 cup diced potatoes
  • 1 28 oz can stewed tomatoes
  • 1/2 cup chopped onion
  • salt
  • 1/2 tsp thyme
  • 1/4 tsp pepper

Method

Place shin bone in a large stock pot, cover with water, cover and heat until boiling. Turn down to low and simmer for 1 1/2 hours. Take pot off the heat and cool shin bone down enough to handle. Remove bone, shred meat off bone, return meat to pot. Discard bone and any pieces that aren't shredded meat. Add vegetables and spices, cover and bring to a boiling point. Turn to low and simmer for 40 minutes.

 

Notes: The vegetable lover will love this soup more than the meat lover, as there is not a lot of meat in the soup. Soup is better the day after it's prepared, but who could wait?
