Vegetable and Goat Cheese Sandwich


French bread is sliced lengthwise, spread with goat cheese & hummus, and filled with avocado, tomato & sprouts that are flavored with oil and vinegar.



Ingredients:

  • 1 loaf French Bread
  • Olive oil
  • Mild goat cheese
  • Garlic hummus
  • 1 avocado, sliced
  • 2 plum tomatoes, sliced lengthwise
  • 1 handful of sprouts
  • 1/4 cup olive oil
  • 1/3 cup white balsamic vinegar
  • 1/2 teaspoon salt

Method

Cut the bread lengthwise in half and drizzle with some olive oil. Put in a pre-heated 400 degree oven until lightly browned. Remove and spread the mild goat cheese on one half of the loaf, and on the other half spread the hummus. In a medium bowl combine the sliced avocado, plum tomatoes and sprouts. In a small bowl combine the remaining olive oil, the balsamic vinegar and salt; whisk until well blended. Add dressing to avocado mixture, using enough to moisten the vegetables to your taste. Place vegetables on the bread and add the bread top. Cut crosswise into fourths. Place on plates and serve.

Notes: Serve with kalamata olives or any gourmet olives. This is also a nice sandwich to serve with soup.
