Wilted Lettuce

Pieces of bacon are cooked with onion and combined with vinegar and sugar; then poured over torn lettuce to wilt.
 

Ingredients

  • 3 strips bacon, cut into 1/2" pieces
  • 1 small onion, peeled and chopped
  • 3 Tbsp vinegar
  • 2 Tbsp water
  • 3 Tbsp white sugar
  • Lettuce

Method

Tear the lettuce leaves into bite-size pieces and place in a large bowl. Cook the bacon and the onion until softened. Remove the bacon from the skillet and continue cooking the onion till almost browning. Add the vinegar & water to the onion and bacon drippings. Return the bacon to the skillet. Pour the bacon mixture over lettuce and mix into the lettuce well. Sprinkle the sugar over the lettuce, toss and serve.

 

Notes: Do not let the bacon mixture get cold; you should prepare the lettuce in the bowl at first. The lettuce will "wilt" from the heat of the bacon mixture, and should be served at once.
