Zesty Linguini with Shrimp

The sauce that's tossed with the cooked pasta and shrimp is made with canned beans, hot peppers, garlic and oil, processed until smooth.Ingredients
- 1 15-16 oz. can Great Northern or Cannellini beans
- 2-3 cloves fresh garlic, peeled
- 1 or 2 Chipotle peppers in Adobo sauce OR 1 to 2 Tbsp. your favorite HOT SAUCE
- 1 tbsp. dry white wine
- 1/4 to 1/3 cup Extra Virgin Olive oil
- Pinch of salt
- 1 8-oz. bag frozen peeled, deveined shrimp, with or without tails, as desired
- 1 small pkg. (8 oz.) linguini
- Spring of fresh basil

Prepare linguine per package directions but cook 1 minute less. Do not drain -- yet! While pasta is cooking, put beans (as they come in can--do not rinse or drain) in bowl of food processor using the steel blade. Add pepper(s), garlic, wine and salt. Process until smooth--about 1 minute. Continue processing and slowly add olive oil, processing until sauce is smooth and creamy in texture. Taste and add more garlic, hot sauce/peppers, and salt as desired. One minute before pasta is done pour frozen shrimp into the pasta water; cook one minute (or till done); drain pasta, but do not rinse it. Put it back into pasta pot; pour sauce over it and toss well. Pour pasta with sauce into serving bowl; place basil sprig on top to serve.
Notes: You will be surprised by this rich and creamy sauce and no one will guess what's in it! Grated parmesan or shredded mozzarella can be served as a topping.
