Zippy Veggie Alfredo

Cream cheese is the base for this rich noodle and vegetable toss. Serve as a side or main dish.
 

Ingredients

  • 12 oz wide egg noodles
  • 1 bag your favorite frozen veggie mix
  • 1/2 c evaporated milk
  • 8 oz lo-fat cream cheese
  • Italian seasoning to taste
  • 4 tbs margarine
  • 1/4 c sliced green onions or bell peppers

Method

Cook noodles, adding veggies in last 5-6 minutes. Drain this, put aside, and keep warm. In saucepan, combine rest of ingredients--be sure cream cheese melts. Now toss it all together.

 

Notes: To boost the zippy part, use Monterey jack with chile instead of cream cheese.
