Zucchini Rice Gratin

Fresh zucchini is sauteed with onions and garlic and then baked with rice and Swiss or cheddar cheese to make for a flavorful casserole.

  • Servings: 4-6


2 Tbsp Butter
½ Onion, diced
1 Garlic Clove, minced
1 lb Zucchini, peeled and diced
1 cup Cooked Rice
1 Egg
1½ cups Swiss Cheese or Cheddar Cheese
Salt & Pepper, to taste


Heat butter and saute onions and garlic. Add zucchini and cook until done. Add cooked rice, egg and 1 cup cheese, into zucchini mixture. Season with salt and pepper. Mix everything well and pour mixture into an ovenproof dish. Sprinkle remaining cheese on top. Bake at 350 degrees for 25-30 minutes or until cheese has melted and browned on top.
